Malaysian Nasi Lemak (Coconut Rice with Chilli paste)


بِسْمِ اللهِ الرَّحْمنِ الرَّحِيمِ



This is a popular breakfast dish in Malaysia. Coconut milk is also good for you if you are trying to be slim

Ingredients (serve 2)

For the rice
1 cup of rice
1/2 cup thick coconut milk
1 cup water
1/2 tsp salt
3 sliced ginger
pandan leaf tied to a knot
a pinch of fenugreek powder

For the meal
2 cups peeled dried anchovies
1 cup of oil
4 boiled eggs
4 tablespoons fried peanuts

For the chilli paste
1 onion, chopped
2 garlic
1 cup of dried chilli , cut into small pieces
1/2 cup of water
1 pinch of shrimp paste (optional)
salt to taste
sugar (optional)
tamarind juice or vinegar

Optional
Banana leaf for wrapping -cut it into a rectangle. Substitute with dried chive or parsley leaves if not available.

Method
1) Wash the rice and boil all the rice ingredients just until you see it bubbles in one or two places. Reduce heat to minimum. Cover and let cook for 20 minutes.
2) Fry the dried anchovies in oil.
3) Cut the eggs into 4 as in picture below
4) Crush the chilli in a blender. Add 3-4 tablespoon of the dried anchovies if you want.
5) Fry the onion and garlic and add in the chilli paste and the rest of the chilli paste ingredients. Cook for 5-10 minutes.
6) Serve with cucumber and peanuts if you like
7) Wrap it with banana leaf for extra flavour. Or sprinkle with dried chive leaves while hot.

    However, Nasi Lemak wont be complete without Sambal Sotong or Sambal Paru, right Jehan?

    2. I am very much surprised to learn the benefits of coconut oil in the website mentioned. But why does routine breakfast of yummy nasi lemak adds on the waist size of most people i know (including / especially me)? perhaps coconut milk works in different ways compared to coconut oil. By the way, I am still very keen to try the coconut oil diet. Hopefully it will resolve some of my health issues .....Thank u so much Jehan !
