Daging ini mesti disalut dengan garam dan bawang putih dahulu dan diikat dengan kuat dan ditutup dan dibiarkan di tempat sejuk selama sekurang2nya 2 minggu. Kalian perlu menyalutnya dengan minyak setiap minggu. Ini untuk memastikan darah daging itu benar2 keluar. Kemudian ianya di salai sejuk seperti video di bawah

 The meat must first be coated with salt and garlic, tied tightly with a string and left covered at near freezing temperature  for 2 weeks minimum. You need to layer it with oil and turn it upside down every week. This is to ensure the blood is evenly drained from the meat . Then it is cold smoked as shown in this video below
