Low fat Chocolate Steam Cake / Cup Cake

بِسْمِ اللهِ الرَّحْمنِ الرَّحِيمِ
In the name of God, the Most Loving, the Most Merciful

This recipe is adapted from Malaysian cupcake called Seri Ayu or Apam. It contains NO oil thus low fat yet moist because it is steamed. It also contains no ovallete (a chemical cake stabilizer unlike in many Malaysian recipes). Kek atau kuih ni tidak mengandungi bahan kimia ovallete

Ingredients A
2 eggs
1 cup sugar

Ingredients B
1 1/2 cups wheat flour
1/2 cup cocoa powder
1 tsp vanilla powder
1 tsp baking powder.

Ingredients C
1 cup yogurt or coconut milk
1 tbsp lemon

1) Mix and Sieve ingredients B
2) Beat ingredients A until the egg yolks colour turn whitish. See the picture below  for better view.
3) Pour in Ingredients B and C alternatively and mix well.
4) Steam for 40 minutes.

Tips:
1) Ingredients C allows the cake to rise and give moist taste to the cake without the use of ovallete
2) If you are mixing the eggs with hand, it can take 40 minutes to get the eggs to very light beige colour, So ensure the eggs are brought to room temperature a few hours before use. Also use warm mixing bowl by placing it over warm water to speed up the process.
